“MADLENE” – FIVE LEVEL TASTING OF BRANDIES AND MORE
1. Apple brandy
Ecologically clean fruit brandy. We pick our apples from the Trojan Balkan, with a delicate fruity aroma, juicy taste with a pleasant finish – we combine it with Kamemberg with an apple.
2. Muscat brandy
Distillation of Muscat Otonel grapes, characteristic of our massifs. It has a very delicate aroma of flowers and herbs with a dense and mild taste – we combine it with dried tomato and mozzarella.
3. Rose Valley
To make this brandy, the aromatic Misket and Muscat Otonel varieties have been selected. As a result of 3 years in Bulgarian oak, it has a pale amber color and a bouquet of aromas, vanilla and caramel can be felt in the taste – we combine it with sheep’s cheese and roasted pepper.
4. Rosalza
Grape elixir created from our own vineyards located in the Rose Valley. It is aged for 5 years in Bulgarian oak, as a result of which its color is amber – we combine it with Brie with fig.
5. Karlovska Anasonliika
We produce it from white wine from our aromatic varieties, through double fermentation
distillation in a copper distillation system, with the addition of high-quality anise seed during the second fermentation. Fine aroma of anise, slight softness and a memorable finish – we combine it with pickled cucumber and marinated trout.

FIVE-COURSE RAKIA TASTING
- Apple Rakia – eco-clean fruit Rakia. We harvest our apples from the Trojan mountain region. Gentle fruit flavour, juicy taste and a pleasant aftertaste – we combine it with Camembert with apples.
- Muscat Rakia – a distilled Rakia from the Muscat Ottonel grape variety, typical for our local lands. It has a very gentle aroma of flowers and herbs with a dense and soft taste – we combine this rakia with dried tomatoes and mozzarella.
- Rose Valley – the flavourful Misket and Muscat Ottonel grapetypes are carefully selected for the making of this Rakia. As a result of three years in a Bulgarian oak barrel, it has a slightly amber colour. Notes of various flavours can be sensed, along with vanilla and caramel. – we combine it with Sheep cheese andfried red pepper.
- Rosalsa – this grape elixir is made with grapes from our own vineyards in the Rose Valley. It matures for 5 years in a Bulgarian oak barrel, and as a result, it has an amber colour – we combine it with Brie with figs.
- Karlovo Anise Rakia – we make it from white wine from our fragrant grape types through double distillation. It matures in Bulgarian oak barrel for five years, and as a result, it has an amber colour. – we combine it with pickles and marinated trout.
